½ cup plain bread crumbs
2 xl egg whites
1 tbsp cayenne pepper
For Breading
1 cup Wondra Flour
3 tbsp heavy cream, ice cold
⅔ cup buttermilk, ice cold, divided reserving 3 T
3 cups lard or Crisco to fry inoptional 3 T duck fat
few shakes of table salt
