Rasta Sam’s Caramelized Lime Reduction

 1 cup sugar
 ¼ cup Lasko's Lime Mix Powder
 1 ½ cups good water, heated to simmer
  cup fresh lime juice
 ¼ tsp kosher salt
 2 pinches cayenne pepper

Heat water and lime juice to simmer. After heated.

Starting with another cold saucepan on low heat, add sugar. Over medium heat, at the very beginning of sweat around the edges of the sugar, with a wooden spoon, begin gently working sugar from edges to center, then around the edges. Keep working it and reducing heat if necessary, to not burn. Once it’s a nice golden brown and a bit caramel texture, VERY carefully begin add the heated lime juice and water, whisking with a wire whisk. It may solidify, that’s ok, keep whisking, it will begin to dissolve. Once completely dissolved, whisk in Lasko’s.

Once everything is completely dissolved, lower heat to a low simmer and simmer 50-70 minutes until starting to thicken and is reduced by about half, stirring occasionally.
