2 tbsp Sumac

2 tbsp Comino, ground fine

2 tbsp Ground Cardamom

1 tbsp Madagascar Black Peppercorns, ground medium

1 tbsp Sarawak Malaysian Black Peppercorns, ground medium

1 tbsp Ground Coriander Seed

1 tbsp Ground Allspice

1 tbsp Ground Tumeric

1 tbsp Ground Cinnamon

1 tbsp Sweet Paprika

2 tsp Aleppo Chili Flakeschili de arbol - adjust for heat

1 tsp Ground Clove

Combine all spices and mix in mortar and pestle. Seal in airtight glass container and keep in cool dark place.

If you are at that next level, before using, place amount desired in small pan and heat to just hot to the touch before using. Or heat in the pan your will be cooking in, remove and proceed.
