Sam’s Chop House Bleu Cheese Dressing

"Sam's Chop House Blue Cheese Dressing is enhanced with the addition of fine Feta Cheese crumbles and Buttermilk Blue Cheese"

 2 tbsp fresh lemon juice
 1 cup Duke's Mayonnaise
 1 cup thick Creme Fraiche
 ½ cup buttermilk
 1 tsp Jane's Mixed Up Crazy Seasoning
 1 ½ tsp garlic powder
 1 ½ tsp onion powder
 1 tsp Worcestershire sauce
  tsp Coleman's Dry Mustard
 ¼ tsp saltto taste
 ½ tsp Madagascar Black Peppercorns, ground fine
 1 dash cayenne pepper
 3 oz Feta Cheese, pulse processed into fine crumbles
 6 oz H-E-B Buttermilk Blue Cheese, crumbled wellsubstitute: Point Reyes Bleu Cheese
 4 oz pancetta, diced, crisped well, drained and cooled

In a medium bowl, combine the FRESH lemon juice through cayenne, whisk incredibly well.

Add Feta and whisk hard to incorporate well.

Gently fold in blue cheese until just blended.

Chill in an airtight container in the refrigerator AT LEAST 3 HOURS before serving.

Serving Suggestion: Serve spoonful of dressing over a small iceberg wedge, endive or grilled romaine and top with the bacon and tomato. Season with pepper.
