 34 cups peanut oil
 1 ½ cups flour1 1/2 - 1 3/4 cups
 4 tbsp corn startch
 1 tsp Bayou Sam's Counter Seasoning
 ½ tsp baking powder
 ½ tsp baking soda
 ½ tsp Bayou Sam's Triple Blast
 ¼ tsp Old Bay Seasoning
 1 ½ cups club sodacold, fresh, un-opened
 white fish fillets, such as Cobia, Alaskan Cod or Snapper, chicken tenders, butterflied jumbo shrimp
FIRST STEP:
1

Heat the oil in a skillet or small pot to 375°.

Combine all DRY ingredients well.

Gently stir in the club soda until just mixed. You do not want to over stir and lose the bubbles.

Dip items in batter, lift and let excess drain off, then immediately into fry oil.

Fry fish fillets, chicken tenders or shrimp until golden brown, 4-6 minutes, maybe 3 to 4 for shrimp, especially if butterflied.
(try dropping in small amounts of batter and let fry up and remove with wire mesh strainer)
