 1 package frozen black eyed peas
 2 -3 tablespoons rendered bacon fat
 2 tsp Louisiana Hot Sauce
 1 tsp olive oil
 1 tsp black pepper
 ½ tsp kosher salt
 ½ tsp garlic powder
 ½ tsp onion powder
 ½ tsp Bayou Sam's Triple Blast
For Garnish
 2 tsp rendered duck fat
 1 medium shallot, diced extra fineGarnish not in photo

Bring 3 cups of water to a hard boil. Add bacon render. Add frozen black-eyed peas and a couple dashes of salt and let boil 2 minutes.

Reduce heat, cover and simmer 30 minutes, stirring a couple times along the way.

Add seasonings and hot sauce along the way.

While peas are simmering, In a small frying pan, heat duck fat to a shimmer. Add shallots and sweat out until just beginning to turn brown. Remove from heat, drain and set aside for garnish. Don't snack on them.

Uncover, raise heat to keep a simmer.
Season with salt pepper & garlic powder to taste.
Simmer 10-15 minutes, stirring a few times. Add small amount of water if getting dry or any sign of sticking whatsoever.

Let stand 5-10 minutes covered.

Garnish with extra fine diced duck sweated shallots.
