Sweet Onion Bacon Dressing

 2 tbsp creme fraiche
 2 tbsp Duke's Mayonnaise
 2 tbsp 2% plain Greek yogurt
 1 tbsp Steen's Pure Cane Syrup
 1 clove garlic, minced and smashed
 2 tbsp parmesan cheeseor Nutritional Yeast
 2 tsp Steen's Pure Cane Vinegar
 3 tbsp Wright Applewood Smoked Bacon, crisped, chopped and pulsed 3 times
 1 small onion, sliced thinabout 3 tablespoons of finished onion
 1 tbsp olive oil
Optional Garnish
 2 tbsp maytag blue cheese crumbles

Sear bacon crisp, strain let cool and crumble small, then pulse in small processor bowl 2 or 3 times.

Heat medium skillet to medium high heat, add olive oil, let heat, add onion, stir to coat. Let saute until onion begins to caramelize, stirring often. About 10 minutes. Strain and set aside.

Combine first seven ingredients and blend in a small cup food processor, then add onions and pulse to combine well.
(optionally, place first seven in bowl with bacon and process until smooth, chill.)

Just before serving, reheat bacon and mix together. Or garnish on top.

Garnish with Maytag blue cheese crumbles if desired.
