 1 large Texas 1015 Onion, sliced 1/3" thick and separated into rings
 1 ½ cups Counsin' T's Buttermilk Pancake Mix
 1 tbsp salt
 1 tbsp black pepper
 2 tsp garlic salt
 12 oz 7-Up, ice cold
 lard or peanut oil for frying in a 13"+ skillet, about 3/4 block of lard

You are not going to want to crowd these, so use as large a pot as you can, or maybe 2. Have about 1" or better of fat. Add fat to pot/pots, bring up to 350°.

Pour all dry ingredients into mixing bowl and mix around.

!DO NOT JUST DUMP YOUR LIQUID IN! Add liquid to dry mix in about thirds (you may not use it all) and gently whisk. Don't beat it. The bubbles are your friend. Once it's just slightly thinner than pancake batter, you're good.

Drop only a couple rings in the batter.

In a single layer and not touching, place battered rings in pot. Drop a couple more in the batter. Once the rings frying have turned golden brown, gently flip them. It shouldn't take over a minute or two. Once flipped and golden brown on the second side, gently remove to metal cooling rack and salt.

Repeat for as many rings as you would like. One large onion will make enough rings for about 4 people.
