Marinade/Sauce
2tbspPremium Dark Soy Sauce

1 ½tspwhite pepper, ground fine
1tbsppeanut oil
2cloves garlic, micro-planed
Chow Mein
1tbsppeanut oil
2cloves garlic, chopped
8ozchicken thighs, boneless, skinless, slice into small thin strips
2tbspSambal OelekOPTIONAL
5green onions, cut into 2" pieces, reserving scallions
3cupsgreen cabbage, shredded
1cupstraw mushrooms, rinsed well and drained
⅓cupcarrots, julienned
10ozchow mein noodles, cooked and warm
1cupbean sprouts
⅓cupscallions, sliced on the diagonal 1/4"
⅓cupwarm water
Don't be intimidated, this is very easy. Read the directions through, then line up your items in order. PREP is key! Have all the ingredients ready to go before you start cooking because it's done in 5 minutes!

Whisk cornstarch and soy sauce, once combined add rest of marinade/sauce ingredients and whisk until well combined.

Pour 2 tablespoons of marinade/sauce over the chicken, mix to coat, set aside to marinate for 30 minutes. Start your preparation.

Prepare the Chow Mein noodles according to their instructions, then drain.

Heat oil in wok over high heat.

Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't burn!

Add chicken (and optional Sambal Oelek) and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.

Add the white pieces of green onion, stir fry 30 seconds. Add cabbage, straw mushrooms and carrot. Stir fry for 1 1/2 minutes until the cabbage is slightly wilted but crisp.

Add the noodles, sauce and water. Stir fry for 1-2 minutes, tossing constantly.

Add bean sprouts, toss through for 30 seconds or until the bean sprouts just start to wilt.

Remove from heat, plate and top with scallions. and serve hot.
