"savory with just a touch of sweet; these aren't your Grandparent's sweet potatoes"

3 good sized sweet potatoes, peeled and 1/2" diced
¼ cup extra virgin olive oil, divided
1 tsp comino
1 tsp garlic powder
1 tsp sweet paprika
1 tsp Jayne's Krazy Salt
1 tsp fresh ground black pepper
½ tsp cayenne pepper
½ tsp smoked paprika
¼ cup scallions

Preheat oven to 375°, middle rack. Line a 1/2 sheet pan with foil.

In a large stainless bowl, add potatoes, drizzle 1/2 the olive oil, add seasonings and stir to mix well.
Let stand 10 minutes.

Pour bowl contents out and spread evenly on foiled 1/2 sheet pan.

Roast 20 minutes, increase temperature to 425°. Pull pan and stir well, respread evenly.

Roast another 20-25 minutes, until just tender and bottom side beginning to crisp. Turn off oven.
Let stand in oven 5-10 minutes.

Plate or transfer to serving bowl. Drizzle with more olive oil if desired. Garnish with scallions.
