2 tbsp champagne vinegar
2 tbsp cane vinegar
1 tbsp Maille Dijon mustard
1 tbsp capers with juice
1 tbsp Sumac
1 tsp kosher salt
1 tsp black pepper coarse ground
1 tsp dried sweet leaf basil
1 pinch black truffle salt
1 Liquid stevia
3 tbsp Atlas Olive Oilor to taste
OPTIONAL
2 pinches xanthan gumif used, add after olive oil, whisk hard, then shake dressing hard before using

Whisk all ingredients EXCEPT olive oil, muddling capers until incorporated.

Let stand 10 minutes.

Slowly whisk in olive oil until mixed well, let stand 15 minutes, re-whisk well.

Dress salad and serve immediately.
