"the signature sauce of Shanghai Sam's Polynesian Palace"

1 tsp Mandarin Zest
½ cup Mandarin Juice, fresh squeezed
½ cup orange juice, fresh squeezedValencia if available
1 tbsp rice wine vinegar
1 tbsp mirin
¼ cup wildflower honey
3 tbsp Steen's Pure Cane Syrup
¼ cup Kikkoman soy sauce
½ tsp roasted sesame oil
½ tsp cayenne pepper
1 ½ tbsp cayenne pepper flakes
½ cup sugar
2 tbsp corn starch, mixed with 2 tbsp hot water
1Whisk together cornstarch and 2 tbsp hot water, set aside.
2In small sauce pan, heat slightly add sesame seeds, let heat, add sesame oil and zest. Let warm.
3Whisk in everything except cornstarch and water. Let come to simmer for a few minutes.
4Now whisk like your recipe depended on it. Whisking constantly, add cornstarch and water.
5Remove from heat and let it cool for 2 minutes. Re-whisk.
