Marinade/Sauce
 2 tbsp Premium Dark Soy Sauce
 2 tbsp cornstarch
 1 ½ tbsp Oyster Sauce
 1 ½ tbsp Hoisin Sauce
 1 tbsp Chinese Cooking Wine
 1 tbsp Mirin
 2 tsp sugar
 1 tsp White Sesame Oil
 1 ½ tsp white pepper, ground fine
 1 tbsp peanut oil
 2 cloves garlic, micro-planed
Chow Mein
 1 tbsp peanut oil
 2 cloves garlic, chopped
 8 oz chicken thighs, boneless, skinless, slice into small thin strips
 2 tbsp Sambal OelekOPTIONAL
 5 green onions, cut into 2" pieces, reserving scallions
 3 cups green cabbage, shredded
 1 cup straw mushrooms, rinsed well and drained
  cup carrots, julienned
 10 oz chow mein noodles, cooked and warm
 1 cup bean sprouts
  cup scallions, sliced on the diagonal 1/4"
  cup warm water
Don't be intimidated, this is very easy. Read the directions through, then line up your items in order. PREP is key! Have all the ingredients ready to go before you start cooking because it's done in 5 minutes!

Whisk cornstarch and soy sauce, once combined add rest of marinade/sauce ingredients and whisk until well combined.

Pour 2 tablespoons of marinade/sauce over the chicken, mix to coat, set aside to marinate for 30 minutes. Start your preparation.

Prepare the Chow Mein noodles according to their instructions, then drain.

Heat oil in wok over high heat.

Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't burn!

Add chicken (and optional Sambal Oelek) and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.

Add the white pieces of green onion, stir fry 30 seconds. Add cabbage, straw mushrooms and carrot. Stir fry for 1 1/2 minutes until the cabbage is slightly wilted but crisp.

Add the noodles, sauce and water. Stir fry for 1-2 minutes, tossing constantly.

Add bean sprouts, toss through for 30 seconds or until the bean sprouts just start to wilt.

Remove from heat, plate and top with scallions. and serve hot.
