 1 cup sugar
 ¾ cup good water
 ¼ cinnamon stick
  tsp ground nutmeg
 1 pinch sea salt
 1 cup Luxardo Maraschino Liqueur
 1 lb cherries, pitted and stemmed
ALTERNATE
 ¾ cup Luxardo Maraschino Liqueur
 ¼ cup Dissaronno
  cup sugar, processed fine

Combine water, sugar, cinnamon, nutmeg, and salt in a saucepan, and bring it to a hard simmer. Stir until the sugar dissolves.

Add the Luxardo Maraschino Liqueur and cherries. Stir to coat all of the cherries in the syrup. Simmer uncovered for 45 minutes to soften the cherries, thicken and reduce the syrup.

Remove from heat and allow the cherries to cool completely. Once cooled, store in the fridge in a tightly sealed jar. Save any syrup left over.

Make 1/2 batch regular 1/2 batch 3/4 c luxardo, 1/4 amaretto
