 2 ½ cups chicken stockor broth
 1 cup orzo
 ½ tsp dried thyme
 1 tbsp lemon zest, TO TASTE! plus 2 tablespoon fresh juiceMIX YOUR ZEST AND 1 TABLESPOON OF JUICE AND TASTE.
 1 tbsp unsalted butter
 2 tsp extra virgin olive oiluse the good stuff here
 ½ cup heavy cream
 1 tbsp fresh or dried chives
 kosher salt & medium ground black pepper to taste

Bring chicken stock to a boil in a medium saucepan. Add orzo and thyme. Very light salt and pepper.

Reduce heat to low and simmer about 10-12 minutes until most of the liquid is absorbed and orzo is just tender but not mushy.

Pour off an excess liquid if any. Add butter stirring, once melted add olive oil, lemon zest and juice. Mix well. Fold in cream and chives and heat very low until just warm. Salt and pepper to taste.
