 6 Large carrots, cut into 4” pieces
 ½ cup Fresh squeezed orange juice
 3 tbsp Dark brown sugar
 2 tbsp Palm sugar
 3 tbsp Steen’s Pure Cane Syrup
 2 tbsp Real Maple Syrup
 2 tsp Ground cinnamon
 ½ tsp Cayenne Pepper
  cup Water
 2 tbsp Corn Starch
 ¼ cup Scallions, for garnish

Peel and cut carrots.

Bring a 3 quart pan of lightly salted water to a boil.

Cook until fork tender. Think of placing the thicker pieces in 5 minutes before the rest. Total time 20-25 minutes. Drain.

In a different saucepan, add orange juice, dark brown sugar, Steen’s, maple syrup, ground cinnamon, cayenne pepper and 1/4 cup of water. Bring to a boil, then reduce heat.

In a separate small bowl, combine corn starch and 1/8 cup of water, whisk until smooth. Whisk this in small amounts into the heated saucepan and bring back to a boil, if too thick, cut with small amounts of water. Once glaze is at desired thickness, remove from heat and keep warm.

Mix carrots with the glaze and let soak at low heat for 5-10 minutes.

Garnish with scallions.
